Poha with Indian Chai

Poha is a famous breakfast recipe made from flattened or beaten rice. It is rich in iron and carbohydrates while low in calories. The limited oil use, while preparation, makes a perfect snack for weight watchers.

It is a delicious light breakfast choice, easy to prepare and takes only a few minutes to cook. To make it nutritious, add potatoes, boiled peas, carrots and roasted peanuts.

Variations 

  • Substitute onions with potatoes, you can fry them or boil them and then add them. 
  • Adding boiled and diced carrots will make the dish colourful and healthy for kids.

Tips 

  • Do not soak the Poha, always use a sieve, otherwise, Poha will become moist.
  • Do not add red chilli powder if you are using green chillies. 
  • Add lime juice before serving.

Ingredients 

  • 2 cups of Poha (flattened rice).
  • 2 tablespoons of oil (I use canola, you can use any cooking oil).
  • 1 tablespoon of black mustard seeds.
  • 5 to 6 curry leaves (optional)
  • 2  chopped green chillies.
  • 1/2 cup of long thin sliced onion.
  • A handful of unsalted peanuts (if you are using salted peanuts, add them at last before serving).
  • 1/2 cup boiled peas (if you are using frozen, soak them in water for 5 mins for better taste).
  • 1 teaspoon turmeric.
  • Salt to taste. 
  • 1 tablespoon sugar (optional) 
  • 1 tablespoon of lime juice.
  • 1 tablespoon of chopped cilantro to garnish (optional).

Instructions 

Add Poha, turmeric, salt, sugar, lemon juice, and keep stirring untill mixed.
Add bhujiya on top before serving.
  • Gather the ingredients as this will save cooking time.
  • Put the Poha in a sieve and wash under running water for 2-3 mins. 
  • Keep it aside to drain.
  • Take the oil in a pan and heat it over a medium flame. Once the oil is hot, add the mustard seeds, curry leaves and green chillies.
  • Once the spluttering of mustard seeds stops.
  • Add peanuts, roast them for 2-3 mins or till their colour change to brown.
  • Add onions and fry till they become soft and translucent.
  • Keep stirring as peanuts and onion might burn. 
  • Add peas and if you want to add potatoes add them now and keep cooking for 2  mins, keep stirring. 
  • Drain the Poha to remove water and now add it to the above mix. Add turmeric and salt and stir well to mix the ingredients.
  • Add sugar and mix well. 
  • Cook for another minute. Turn off the stove, add lime juice and mix well. 
  • Add cilantro for garnish.
  • Add bhujiya before serving for extra crunch (optional).
